Pumpkin Bars

Simple but delicious.

Especially the thick layer of cream cheese frosting.

My family is celebrating Thanksgiving this weekend and I’m bringing the pumpkin. As in pumpkin bars and two pumpkin pies. I know the pumpkin bars will turn out. I am not so certain about the pies. We’ll see.

Pumpkin Bars

Mix a mixing bowl, blend the following:

4 eggs
1 cup oil
2 cups sugar
1 – 16oz can of pumpkin

Combine the rest of the ingredients together and add to the liquid batter:

2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp nutmeg

Mix batter well.

Pour into a greased and floured 12x18x1-inch pan.

Bake at 350° for 25-30 minutes.

Let the bars completely cool before frosting.

Frosting:

6oz cream cheese, softened
6 Tbsp butter, softened
1 Tbsp cream or milk
1 tsp vanilla
4 cups powdered sugar, or until right consistency to spread.

Cover the bars with frosting.

These bars freeze very well but really, who can resist?
