Homemade for the Holidays: Breakfast Casserole

Melissa from LuLu the Baker is up today. Following a decadent pin, I found Melissa’s lovely spot in blogland filled with more beautiful photos of delicious food. I started writing down recipes to try but when I was writing down almost every one, I thought maybe I should just bookmark the page. :) I am liking these recipes especially: Breakfast Cake, Grilled Ciabatta with Roasted Garlic, Christmas Cheeseball, Oven Nachos with Mexican Crockpot Chicken, Mom’s Sweet Corn Chowder and, the one that started it, Carmelitas. Yummo! Here is Homemade for the Holidays with Melissa.

My family has always had a lot of traditions, especially when it comes to holidays. For St. Patty’s Day, we always wear as much green as we can manage, watch Darby O’Gill and the Little People, and feast on an Irish Fry. For Easter, we always wear coordinating outfits, even if we are scattered all over the country. At Halloween, we always start the month with a dance around the Halloween pillow cases, and end it with a big bowl of Halloween Stew. As you can imagine, our Christmas season is fully loaded with fun traditions: we always have a party on December 1st to kick off the Christmas season; we always put paper Norwegian flag garland on our Christmas trees; we always eat soup at Nana’s house on Christmas Eve, open presents from our cousins, and read the Nativity story out of the Bible.

One of my favorite Christmas traditions, and certainly one of the tastiest, is what we eat for breakfast every Christmas morning without fail: Breakfast Casserole. At some point in my childhood, my Aunt Shelly made this delicious ham-, cheese-, and green onion-packed savory egg casserole for a family function, and we’ve been wild about it ever since! In fact, we’re having it for dinner tonight! It goes wonderfully with fresh fruit, toast, and juice, and is so easy to put together–which makes it the perfect Christmas morning!

Breakfast Casserole

Serves 12

Ingredients

  • • 16 eggs
  • • 2 cups milk
  • • 1/2 teaspoon garlic salt
  • • 16 oz ham, diced
  • • 2 cups shredded cheddar cheese
  • • 2 cups shredded mozzarella cheese
  • • 1 bunch green onions, thinly sliced, white and light green parts only
  • • freshly ground black pepper

Instructions

  1. Beat eggs.
  2. Add milk and garlic salt, and stir.
  3. Grease a 9x13" pan, and spread ham, cheeses, and green onions evenly over the bottom.
  4. Pour egg mixture into pan, sprinkle with pepper.
  5. Bake at 375°F for 45 minutes. Let stand about 5 minutes before cutting and serving

  1. I didn’t come across what we Minnesotans call “egg bake” until spending a holiday with my husband’s family. Now it’s all I crave for special breakfasts, but with just the two of us, I have a hard time making it because the thought of leftover eggs makes me want to die.
    LOVE “breakfast casserole!”
