It’s so hot and humid!

How hot and humid is it??

So hot that I began to drip sweat just standing outside and it’s so humid my camera did this during the first shot.

No, that isn’t a softening effect. That is genuine, authentic fog on my lens. Sheesh!

However, these hot summer days do remind me of my childhood. Riding bikes with my sister to the pool every day and not worrying about how my fabulous tan could lead to skin cancer, eating Mr. Freezes upon our return, straining to learn gardening tips from my mom among other things. What a care-free life!

I also remember the first summer I was in charge of making my own lunch. I felt so capable and so mature (little did I know that life responsibility would just keep growing and growing from there).

And what did I make myself pretty much every single day?

A peanut butter and jelly sandwich.

And to this day, I still love eating them often. So here is a “toast” (pun intended) to growing up and getting wiser and heaping on the responsibility.

Grown-Up PB&J

Serves 2 - very easy to double, triple or reduce

adapted from Better Homes & Gardens recipe

Ingredients

  • • 6 slices bread, lightly toasted - whole grain is best
  • • 1/2 cup peanut butter*
  • • 1/2 pint fresh raspberries (or strawberries)
  • • 1/8 cup honey*
  • • 1/4 cup granola*, any kind - break up the large chunks
  • *Personally, I don't think measurements are needed on these ingredients, just make it to your liking. But for you exacting-fools out there, these are some guidelines.

Instructions

  1. Start by spreading peanut butter on all six (6) of the lightly toasted slices of bread.
  2. In a small bowl, lightly mash raspberries with a fork. If using strawberries, first cut them up into smaller pieces and then mash with a fork to get them juicy. Then divide the mashed berries among four (4) of the slices.
  3. With those same four (4) slices, sprinkle the granola and drizzle the honey.
  4. Stack one plain peanut butter slice on two (2) of the PB, raspberry, granola and honey-ed slices. Then top with another decked out slices.
  5. Slice to serve.
