Sugar Cookie Chex Party Mix

Hello again!! I hope your holiday week and weekend were wonderful. Relaxing, entertaining and just splendid.

Like most breaks, it went by entirely too quickly for my liking. We enjoyed being home in our own house and slowing it down for a few days. That’s not to say we didn’t do anything, however. :)

On Friday, Love Bug and I attended the Chex Party Mix booth at the Mall of America and had a wonderful time. (A few pics of which are on Instagram @thisheartofmine.) The hosts were so kind and excited to share and I met a few new-to-me bloggers from the Twin Cities area. But my favorite part was being with Love Bug all by myself. I can’t really remember the last time I had her all to myself and we were doing something fun. I was able to concentrate just on her, really listen and get lots of face time. Oh, what a joy it was. I am definitely making plans for future ‘dates’ and soon.

When our event ending, we returned home and I went on my first Black Friday shopping expedition. Nothing outrageous, just wanted a fabric door-buster at JoAnn’s. I was warned it was a madhouse and it was. The parking lot(s) was nuts, the roads leading to the parking lots were nuts and that was just outside. When I got inside, all the carts were gone so I had to stare at the customer’s checking out so I could snag one. Black Friday pros instructed me that I needed to get a number for the cut table first so that was my next stop.

The number they were serving was 30. I picked 11. I laughed to myself for a while. (If you’re confused, it meant that they had to go from 30 to 100 and then start all over again before getting to my number 11.) It wasn’t so bad. It gave me ample time to find what I wanted, plus some other stuff. The trip was long and I was tired afterwards but it was fun too.

Also over the weekend, we got our first real Christmas tree of our married life. We aspired to cut one down ourselves but settled on getting the kind we liked at a local store. We went with the one we saw first and, in my unbiased opinion, it’s perfect. Straight, perfectly shaped and it smells wonderful. We are slowing decorating but hope to get the tree done tonight. (Again, more pics on Instagram @thisheartofmine.) I don’t know if it’s the tree or what but I am really into the Christmas spirit this year.

So, onto the recipe in the post title. At the Chex Party Mix party function on Friday, this Sugar Cookie mix was one of the three they prepared and served to us and also served to the shopping masses. I hadn’t tried it before but Love Bug had like five little cups of it while we were there so I thought it had to be good. We had dinner with friends on Saturday night so I mixed up a double batch to share. It was quick and easy and our group was almost able to finish it off completely. Haha!

I really like how simple it is (it really only takes 15 minutes, probably less so) and how it’s different than giving cookies. However, I’m not sure I will ever have any to share as it disappears very quickly after it’s finished.

Sugar Cookie Chex Mix

recipe from Chex, though I adjusted the steps a bit


  • • 6 cups Rice Chex
  • • 1/4 cup butter
  • • 1/4 cup granulated sugar
  • • 2 Tbsp corn syrup
  • • 2 tsp vanilla
  • • 1/4 cup powdered sugar
  • • 1/4 cup white chocolate chips
  • • 2+ tsp colored sugar sprinkles


  1. In a large bowl, measure out the cereal.
  2. Place the butter in a microwave-safe measuring cup and microwave it until it melts, about 30 seconds.
  3. Add in the granulated sugar and corn syrup and stir to combine. Microwave uncovered on high for 30 more seconds until the mixture is heated and can be smoothly stirred.
  4. Stir in the vanilla.
  5. Pour over the cereal, stirring until it is all evenly coated.
  6. Sprinkle with powdered sugar and mix well. Add in the white chocolate chips.
  7. Microwave uncovered on high for 2 minutes, stirring after 1 minute.
  8. Sprinkle with colored sugar sprinkles.
  9. *You can spread it on waxed paper or foil if you'd like, or you can just eat it from the bowl.
