It’s a sweet treat day. It’s a good thing because this is what we’ve been looking at for what seems like an eternity.

I only know this ‘cookie’ by the name of the person who first made them and kindly shared the recipe with my family. Nyda Kolp introduced us and it’s been on our holiday cookie list ever since. It doesn’t seem like much but it is maddeningly addictive. My sister kindly refers to it as some sort of holiday illegal substance. It’s that good.

The butter and sugar are boiled together to make a very simple caramelly syrup. Make sure to do to the melting and boiling slowly over medium heat while stirring almost constantly. If you don’t, strange things happen. I know from experience.

The simple caramel is then poured over single graham crackers and topped with sliver almonds. I always add lots of almonds. Then, while it’s in the oven, the caramel sauce boils and cooks and becomes so delicious.

After removing them from the oven, the cookies need a little time to cool and firm up. Once they are cooled, the tray can be broken up into single graham crackers again.

They taste like a cracker drunk with butter and sugar. It’s heavenly.

I’ve already packaged some up to share because I know that if they are left unattended, they will disappear.

Graham Cracker Cookies

48 graham cracker cookies

Recipe from Nyda Kolp

Ingredients

  • 1 cup butter
  • 1/2 cup sugar
  • 48 single graham crackers
  • 2-3oz almond slivers

Instructions

  1. On a foil-covered cookie sheet, lay out the 48 graham crackers. Lay them close to get them all in.
  2. Over medium-heat, melt butter.
  3. Add in the sugar and boil together for 2 minutes. Stir almost constantly.
  4. Pour over the graham crackers making sure to get some on each graham cracker.
  5. Top with almond slivers.
  6. Bake at 325F for 10-15 minutes.
  7. Allow to cool.
  8. Then break apart and store in an air-tight container.

    Hi Amy Christie- Thank you so much for this! I found a recipe hand written by my grandmother that said to use ‘graham wafers’, so I went in search of a recipe online to confirm my idea that she meant graham crackers, and here was your recipe!! It’s almost the exact same recipe. My Nan only refers to them as Almond Slivers on her recipe card.

    I have had same recipe for many years except instead of slivered almonds, my recipe called for chopped pecans pieces. This is always a hit.
