Hello again!

How was your week? I was able to get a few items checked off my long list and it feels good. I also caught a fantastic cold which took away a little of my gusto and I’m still on the mend. Nevertheless, me and my manly voice are getting back into it.

A few years ago, I shared this recipe. It is one of our very favorites and we eat it often. The children absolutely love it. You should see Sweet J when he’s in eat mode – he doesn’t even bother with chips. It’s just fists of dips scooped in his mouth. It’s cute but so very messy. I felt like the previous photos were lacking so I went about photographing it again.

It’s so easy to make and it’s fresh and flavorful. We really like it during the summer because it doesn’t require the oven. First goes a layer of cream cheese, then a mix of beans, onions and various spices. On top of that goes chopped peppers (2 colors!) and chopped green onions. Top that all with shredded cheese.

Even before I got any finished shots taken, there was an incident. What happened next was terribly unfortunate.

Yup. The whole thing. Face plant on the carpet. Even though I watched it unfold, in slow-mo, I still stared at it for a good 30 seconds, wondering what the heck happened. But, as the great Julia Child said, “Always remember: If you’re alone in the kitchen work room and you drop the lamb entire plate of bean dip, you can always just pick it up. Who’s going to know?”

So I scraped it up and added more cheese. I didn’t show MJ the photo I took until after we’d eaten it. He’s so weird about floor food. Haha!

So, in the end, these are not the much improved finished shots I was hoping for but they are a little improved so it works. :)

Black Bean Dip

Recipe adapted from The Clueless Vegetarian

Ingredients

  • 1-19oz can of black beans, rinsed
  • 1/4 cup chopped onion
  • 1-2 cloves garlic, minced
  • 2 Tbsp lime juice
  • 1 Tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/4 tsp red pepper
  • 1-8oz cream cheese, softened
  • 1/2 of two peppers. green, red, orange or yellow
  • 2 green onions, chopped
  • 1/2 (or more) shredded cheddar or Monterey Jack cheese

Instructions

  1. Combine the beans, onions, garlic, lime juice, oil, cumin, and hot pepper flakes. Stir together, cover and then refrigerate for 1-2 hours, to allow the flavors to blend.
  2. When ready to serve, spread the softened cream cheese on a platter/serving plate. Top with bean mix, peppers, green onions and shredded cheese.
  3. Serve with chips.

  1. Hahhaha. Glad to know I’m not the only one regularly adding to the mess in my house. Looks great, and I”m glad you got a few things done in your “week off” last week; feels so good, I know!

  2. Oh honey! That stinks. I did it a couple months ago with an ENTIRE cheesecake. It face planted in my driveway as I was getting to the fleeting light. I was devastated! I did grab a fork and eat a few bites that landed on top!!
    Love the bean dip. So doing this soon!
