Simple & Mostly Healthy Chicken Tacos for Any Night of the Week | this heart of mine

Weeknight meals are rough. Everyone is tired from the day, there isn’t a lot of time and there are so many things to do. The rush is on from when the children get home through bedtime and by this part of the week, I’m ready to crawl in bed until the weekend. But as momma and head cook, I have to feed the crew so I am always on the lookout for easy, simple and delicious weeknight meal ideas. Oh, and healthy which is where these mostly healthy chicken tacos come in.

After the holidays, in the dead of winter, I crave colorful foods. Color is good, color is healthy. While the base of these tacos – skinless, boneless chicken breasts – lack in color, the toppings more than make up for it. Tomatoes, avocados, peppers, cheese, cilantro corn relish and more cilantro to top. But that’s just the beginning. The more color the better. These tacos are easy and everything can be done ahead of time. I’m so entrenched in the start-making-dinner-at-5pm pattern, on the nights we make this, I have to keep reminding myself I’ve already done the work! It’s the best feeling.

It’s simple. Pop the chicken in the crock pot in the morning and prep the toppings then or any time. Then at dinnertime, enjoy the ease of simply making the tacos to taste and eat up.

Mostly Healthy Chicken Tacos in the Crockpot

Ingredients

    Chicken:
  • 3lbs skinless chicken breast
  • 1 packet of taco seasoning
  • 1 jar of salsa
  • Cilantro Corn:
  • 1 1/2 cups corn
  • 1/2 bunch of cilantro, finely chopped
  • juice of 1 lime
  • 1 jalapeno, finely chopped
  • salt & pepper
  • The rest:
  • tortillas (or chips)
  • cheese
  • tomatoes
  • peppers
  • avocado
  • cilantro leaves

Instructions

    Chicken:
  1. In a crock pot, add in the chicken breasts, taco seasoning and salsa.
  2. Top with a lid and cook on low until the chicken in fully cooked, turning the breasts a couple time to spread the seasoning and salsa.
  3. Use a fork to shred the chicken.
  4. Cilantro Corn:
  5. Toss together the corn, cilantro, lime juice, jalapeno, salt and pepper. Stir together and set aside.
  6. Make tacos!:
  7. Serve up tacos with lots of colorful toppings.

Notes

*Place leftover chicken in plastic containers and store in the fridge. Make sure to add in the juices from the crock pot too to keep the chicken moist.
